Recipe: Wine Braised Beef with Grilled Polenta

For Roast:
- 5 lbs beef roast (Round)
- Olive oil
- 1 large yellow onion
- 4 clove garlic
- 2 large carrots
- 3 stalks of celery
- 2 TBSP tomato paste
- 2 bay leaf
- 2 sprigs of rosemary
- 4 sprig thyme
- Salt, pepper, and sugar to taste
- 4-5 cups red wine (1 bottle)
Garnish Gremolata:
- 1 Tbsp lemon zest
- 1 Tbsp Grated Fresh horseradish
- 1 Tbsp minced Italian parsley
Instructions:
Heat oven to 300 degrees.
Mince Vegetables finely.
Portion beef into 8 thick slices and lightly salt and rest to room temperature.
Heat an oven safe pot with lid on stove with olive oil.
Evenly sear beef slices to get a even deep browning on all sides, remove to rest.
Add minced vegetables with a pinch of salt and sauté till brown.
Add tomato paste and stir while cooking to evenly mix into vegetables and add fresh herbs.
Deglaze pot with red wine and rest the beef. The liquids should at least slightly cover the meat.
Bring to a simmer, cover with lid and place in the oven for 3 hours or until tender and begins to fall apart. Add salt, pepper, and sugar to taste.
Serve with polenta, bread, or mashed potatoes. Garnish with Gremolata.
