Recipe: Mushroom Souvlaki

  1. Clean and slice mushrooms.
  2. Add all ingredients but the mushrooms to a large bowl and whisk to combine. Add mushrooms and allow to marinate for at least 1 hour, and up to 4 hours.
  3. Preheat your oven to 400° F. In the mean time, cover a sheet plan with foil and lightly oil or cover with pan-spray. Thread marinated mushrooms onto a few skewers and place skewers on a sheet plan.
  4. Roast for 25 minutes or until edges of the mushrooms are golden and chewy.
  5. Serve Immediately! Mushroom souvlaki also makes a great sandwich with tzatziki and pita, and is always great served along with roasted vegetables
