Recipe: Mushroom Souvlaki
Vegan, Gluten Free
Serves: 4 | Prep Time: 10 min | Cook time: 25 min
Ingredients:
- 1 pound (500g) mushrooms, sliced (recommend crimini/ brown button or portobello)
- 2 Tbl olive oil (or oil of choice)
- 2 Tbl lemon juice
- 1 Tbl minced garlic
- 1 tsp oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 sprig rosemary, chopped
- Salt and pepper to taste
Instructions:
- Clean and slice mushrooms.
- Add all ingredients but the mushrooms to a large bowl and whisk to combine. Add mushrooms and allow to marinate for at least 1 hour, and up to 4 hours.
- Preheat your oven to 400° F. In the mean time, cover a sheet plan with foil and lightly oil or cover with pan-spray. Thread marinated mushrooms onto a few skewers and place skewers on a sheet plan.
- Roast for 25 minutes or until edges of the mushrooms are golden and chewy.
- Serve Immediately! Mushroom souvlaki also makes a great sandwich with tzatziki and pita, and is always great served along with roasted vegetables
