Recipe: Chicken Souvlaki

Serves: 4 | Prep Time: 10 min | Cook time: 25 min
Ingredients:
- 2 pounds chicken thighs (boneless/skinless), diced
- 3/4 cup olive oil (or oil of choice)
- 3/4 cup lemon juice
- 2 Tbl minced garlic
- 2 Tbl oregano
- 1 tsp ground salt
- 1/2 tsp pepper
- Pan spray or oil to coat pan
Instructions:
- Preheat oven to 375° F.
- Add all ingredients but the diced chicken thighs to a large bowl and whisk to combine. Add chicken and toss to coat. Cover and refrigerate for at least 2 hours, but no more than 6.
- Line sheet pan with foil and spray or oil lightly. Remove chicken from refrigerator and arrange on coated pan evenly.
- Roast for 20-25 minutes or until chicken reaches an internal temperature of 165°.
- Serve hot if for a meal, or use cold as a snack! Chicken souvlaki also makes a great sandwich with tzatziki and pita and is always great served along with roasted vegetables.
