Recipe: Chicken Souvlaki

  1. Preheat oven to 375° F.
  2. Add all ingredients but the diced chicken thighs to a large bowl and whisk to combine. Add chicken and toss to coat. Cover and refrigerate for at least 2 hours, but no more than 6.
  3. Line sheet pan with foil and spray or oil lightly. Remove chicken from refrigerator and arrange on coated pan evenly.
  4. Roast for 20-25 minutes or until chicken reaches an internal temperature of 165°.
  5. Serve hot if for a meal, or use cold as a snack! Chicken souvlaki also makes a great sandwich with tzatziki and pita and is always great served along with roasted vegetables.
